Text Box: Buttermilk Muffins


2 1/2 cups White Lily all-purpose flour

1 cup sugar

1 1/2 teaspoons Clabber Girl baking powder

1/4 teaspoon salt

3/4 to 1 teaspoon ground cinnamon

2 beaten eggs

1 cup Mayfield Dairy buttermilk

1/2† cup Hain Safflower Oil


Preheat oven to 400


Mix dry ingredients together in large mixing bowl. Make a hole in center of the flour mixture.

Combine liquids in smaller bowl: mix, then add to the dry ingredients. Do NOT over mix, as muffin batter should be slightly lumpy.

Line muffin tins with muffin papers/baking cups, and using an ice cream scoop, fill papers 2/3rdís full. Bake about 14-15 minutes. Makes about 12-18 muffins, depending on your muffin tinís cup size.
