This is a one day class. The tofu will take less than 90 minutes to make. The remainder of the time will be focused on traditional  and Japanese inspired dishes, including using the tofu made that morning for the Luncheon.

             Class begins at 10:00 a.m., ending at 1:00 p.m. In this class you will:

· Learn the basics of soybeans and Japanese food

· Make 48 ounces of tofu

· Luncheon menu prepared by you and the instructor:.

       Miso-shiru (Miso soup with tofu and spring onions)

       Tsukemono (Japanese pickles)

       Agedashi-dofu (Fried tofu)

       Chilled tofu

       Mabu Dofu (Spicy Tofu)

       Kobachi

       Steamed Rice

       Orange slices

 

       Handout, complete with instructions and recipes included.

 

Workshop Summary

             Tofu has been the staple of the Asian cultures for centuries. It is inexpensive to make and a great source of protein. Unfortunately, American cooks have attempted to present it as a vegetarian ‘meat’ substitute, i.e., tofu scrabbled eggs, instead of the simple and tasty food product that it is.

             Your instructor has been making tofu since 1985. It has been approved by several Japanese men that declared it “Like Oka-san (mother) made!”
